Eggs

 

Our certified organic eggs are made right here on our farm by our certified organic laying hens. The ‘ladies,’ as we refer to them, spend their evenings protected in their house. During the day, however, they are free to roam to their hearts content on pasture.

Why is pasture so important? Nutritional studies of pasture raised eggs indicate that pastured hens produce eggs with:

  • 70% more vitamin B 12

  • 3-6 times more vitamin D

  • 50-200% more folate

  • 40-60% more vitamin A

  • 30-34% less cholesterol

  • 10-25% less saturated fat

  • 2-7 times more omega-3 fatty acids

  • 2-3 times more vitamin E

  • 7 times more beta carotene

See the difference for yourself: Our eggs have deep orange yolks that stand up and do not break easily. The whites are thick and stay put.

Our eggs are usually in short supply. Members get first dibs and can choose eggs as part of their CSA share. If we ever have extra, non-members can purchase them from us at the Burlington Farmers’ Market, but don’t get your hopes up.
